INGREDIENTS

For the Rice:

  • 1 cup uncooked white Rice
  • Water
  • Salt - pinch
  • 1 cup chopped cilantro
  • 3 1/2 tbsp FRESH Lime Juice (approximately 1 large lime)
  • pepper

For the Chicken:

  • 1 lb chicken breast
  • 4 tsp taco seasoning
  • 1 tbsp olive oil

Chip Strips

  • 1 flatout gluten-free OR light Flatbread
  • 1 tsp olive oil
  • Season tacos with 1 teaspoon

For the Bowls:

  • 1 tbsp olive oil
  • 1 large red pepper sliced
  • 1/2 large onion sliced
  • 2 Tbsp minced garlic
  • Salt and pepper
  • 1/2 cup avocado, mashed (about 1 small avocado)
  • 1 tbsp freshly squeezed lime juice
  • 1/4 cup salsa of your choice
  • 1/2 cup corn (thawed, if frozen)

INSTRUCTIONS

Preheat your oven to 350°F. While the oven is heating, prepare 1 cup of rice according with the package instructions. Add a pinch salt. You can also use my Instant Pot version. After the rice has been cooked, add the lime juice, cilantro, and a pinch pepper to the bowl. Fluff the rice with a fork.

After removing any moisture from the chicken, rub the chicken with taco seasoning. This Taco Seasoning recipe is what I use. Over high heat, heat the oil in a large oven-proof saucepan. Cook the chicken breasts for about 1-2 minutes. Flip the chicken breasts and cook until golden brown. Place both sides in the oven for 20-25 minutes until they are no longer pink.

Flatout or Flatbread should be laid on a cookie sheet. Oil it. Add the taco seasoning to the flatout and rub it in well. Cut the Flatout in half lengthwise and then cut each half into 1/2-inch strips. Bake for 10 minutes on a cookie sheet.

Brown

Add the remaining 1 tablespoon olive oil to a large saucepan on medium/high heat. Cook the garlic, peppers, onion and garlic for 7-10 minutes.

How to make Chicken Burrito Bowls

  • Combinethe avocado and lime juice with a pinch salt and pepper in a bowl. Mash together. Divide the salsa and corn among 4 containers.
  • Divide the rice among the storage containers. Next, cut the chicken into pieces and place it in the containers.
  • Splitthe chips into four small, snack-sized Ziploc bags. This prevents them getting soggy and allows them to be placed on top of each container. To make it even more delicious, you can add a slice of lime to each container.

This burrito bowl is suitable for vegetarians. It's easy to substitute chicken for any other ingredient, with so many meat options available.

I look for meat substitutes that have the same taste and texture as the real thing. Jackfruit is great because of its texture and taste. You can add jackfruit to your bowl by shredding it. Tempeh and tofu are also great options.

You should avoid Seitan if you want your bowl to be gluten-free. This meat substitute is high-protein, but made from wheat gluten.

How to store chicken burrito bowls

It is best to keep your chicken leftovers separated, just as you would for the week.

All of your ingredients should be kept in separate, airtight containers. This will keep your food fresh and prevent flavors from blending. To prevent harmful bacteria growth, make sure you keep leftovers in the fridge for at least two hours after cooking. Burrito bowls can be kept fresh for up to four days.

Ingredients

This is the rice

  • 1 Cup Uncooked white rice

  • Mix the avocado, lime juice, salt, and a pinch of salt in a bowl. Divide the avocado mixture among 4 containers. Next, add the salsa and corn.
  • Divide the rice among the storage containers. Next, cut the chicken into pieces and place in the containers.
  • Split the chips into four small Ziploc bags. This will prevent them from becoming soggy. To make it even more delicious, you can add a slice of lime to each container.
  • Keep in the fridge for up to five days.

How to store cooking spice?

I'll show you how to store spices properly for best results. We must first understand the science behind food storage.

Keep spices out of direct sunlight as light will reduce their flavor. This is due oxygen reacting with organic compounds such that spices, causing oxidation.

To avoid oxidation, spices must be kept in dark cupboards. These conditions can cause spices to quickly lose their flavor.

Keep spices fresh by storing them in airtight jars out of direct sunlight.

You can flavor water by adding herbs and spices. Mix two teaspoons of ground cinnamon and 1/2 cup warm water. Stir well. Serve immediately with a squeeze of lemon.
